Title: Bedeutung und Bezugsstrukturen von Bio-Produkten in kleinen Gemüse-, Obst- und Lebensmittelgeschäften im Raum Hamburg
Language: German
Authors: Altin, Leyla
Issue Date: 7-Jun-2011
Abstract:

This thesis was written in the course of a project for the Hanseatic city of Hamburg and primarily concerns the ecological market in the aforementioned city. The goal of this thesis is to find out which role ecologically produced products play in small grocery stores, and where these stores obtain their ecologically bred products. Based on data from literary research as well as from personal analysis at the investigation point in Hamburg, this thesis seeks to find out how these small grocery stores are structured as well as the reasons behind the recent shift of focus towards ecologically bred food products.
In order to conduct a more thorough analysis on this topic, a survey is required. Within the course of the evaluation, owners of small vegetable, fruit and grocery stores with organic assortments will be interviewed. Furthermore, a store check will be carried out at the investigation point, Hamburg, in order to retrieve additional information. As a result of this survey, new approaches and strategies should be developed which could potentially support this means of distribution in the grocery industry. The evaluation further shows that the majority of ecologically bred goods were obtained from the central market in Hamburg. One of the most important reasons for the supplementation of organic goods in the market is the ever-growing demand in this product group. Additionally, in the course of this investigation, it will be discovered that this particular selling group barely uses any means of communication in order to market their organic products. A high support potential exists for regionally produced goods through communication and political measures, which we will show to require further research in this field. These findings were used as basis for requirements and recommendations for this type of sale, regarding regionally produced organic-products, and will be incorporated as information in the thesis.
