Title: Category Management im Lebensmittelhandel als Einsatzgebiet für Ökotrophologen

Abstract: 
Im Zuge der kooperativen Verkaufsförderung entstand das Konzept der Efficent Consumer Response. Daraus resultierte die Position des Category Managements.
Zu den Aufgaben des Category Managements gehört es die Handel- und Hersteller-Beziehung zu fördern. So wurde dem Category Management, als Schnittstelle zwischen Handel und Hersteller, die Kontrollfunktion über sogenannte Categorys, Warengruppen mit gleichen Produkten diverser Hersteller, übertragen.
Zu den Aufgaben des Category Managements gehört es die Ziele der Warengruppe zu definieren, die Kosten einer Warengruppe zu minimieren, den Profit zu steigern, die Bedürfnisse der Konsumenten durch Interaktion zwischen Handel und Hersteller zu stillen und nach Begebenheiten des Marktes über die Strategie der Warengruppe zu entscheiden.
Das im Ökotrophologie-Studium vermittelte Wissen ermöglicht dem Studierenden einen sicheren Umgang in dem Bereich der Lebensmittel. Als Ökotrophologie- Student der HAW Hamburg erlangt man durch das Belegen des Schwerpunktes im Profilbereich B zusätzliches Wissen über Marketingstrategien und die Sammlung und Auswertung von Marktforschungsdaten, welche man für die Arbeit im Category Management benötigt. Auch das Wissen über Lebensmittel gilt hierbei als wichtiges Wissen um im Category Management des Lebensmittel- handels kompetent seine Aufgaben zu erfüllen. Allerdings fehlt einem Ökotrophologen das Wissen über logistische Vorgänge, da er in seinem Studium dieses Wissen nicht vermittelt bekommt. Dieser Mangel an Wissen kann zur einzigen Hürde für einen Ökotrophologen im Arbeitsfeld des Category Managements führen.

Allocated of the cooperative sales promotion, the Efficient Consumer Response was founded. As result, the position of Category Management was built up. The most important challenges the Category Management has to deal with are to promote the relationship between retailer and industry. That’s why the Category Management is an interface of the retailer and industry for the observation of categories, a group of same products, but different producers. The tasks of the Category Management are to define the category, to minimize the costs of a category, thus maximize the profit, to satisfy the requirements of the consumers by interacting between retailer and industry and to decide about the strategy of the category by observing the events of the market.
While studying nutrition science you get detailed knowledge about the field of food. As a student of nutrition science at the HAW Hamburg you get the additional knowledge about marketing strategies and the collection and evaluation of market research data by occupying classes in the profile area B, that is needed for successful working in the field of category management. Furthermore, the knowledge about food is an important impact in the Category Management to fulfill the tasks with competence. However, the studies of nutrition sciences do not transmit the subject “logistics”, that is missing for the category management. That lack of knowledge is the only missing attribute for successfully working in the field of Category Management.
