Abstract: 
In der vorliegenden Diplomarbeit geht es um die Pflanze Stevia rebaudiana Bertoni und die in ihren Blättern gebildeten süß schmeckenden Komponenten, die Steviolglykoside. Mischungen dieses Stoffes enthalten als Hauptbestandteile Steviosid und /oder Rebaudiosid A, die seit Dezember 2011 in der europäischen Union als neuer Süßstoff freigegeben sind. Sie dürfen, in bestimmten Grenzen, in ausgewählten Lebensmitteln und Getränken eingesetzt sowie als Streusüße vertrieben werden. Einige neue Produkte und Produktvarianten sind bereits im Handel erschienen und werden in Zukunft noch folgen.
Die Diplomarbeit gibt einen Überblick über viele verschiedene Gesichtspunkte, die diese Thematik umfassen. Unter anderem geht es um die Pflanze und ihren Anbau sowie die Prozesse, die in ihr ablaufen, um die süßen Stoffe zu bilden. Die Steviolglykoside werden analysiert und die Produktionsschritte werden erläutert. Zudem wird die Wirkungsweise im menschlichen Körper nach der Aufnahme erklärt.
Es wird ein Überblick verschafft über die Zulassung durch die EFSA, deren Analyse möglicher Gefahren für den menschlichen Organismus und die daraus resultierende Festlegung einer täglich tolerablen Verzehrmenge. Darüber hinaus wird erklärt welche Vor- und Nachteile Steviolglykoside im Vergleich mit Zucker und herkömmlichen Süßstoffen aufweisen. Als Letztes wird ein kurzer Überblick über die momentane Marktlage gezeigt und einige bereits erhältliche Produkte werden vorgestellt.

The present diploma thesis is about the plant Stevia rebaudiana Bertoni and the sweet tasting compounds, the Steviolglycosides, which are formed in the leaves. The main components in mixtures are Stevioside and Rebaudioside A, which are released in the European Union as a new sweetener since December 2011. They can be used in selected foods and beverages within legal limits and distributed as powdered sweetener. Some new products and product variants are already on the market and some further will follow in future.
This diploma thesis gives an overview of many different points of view regarding this complex theme. Among other things it is about the plant and the cultivation as well as the processes to build these sweet substances. The Steviolglycosides will be analysed and production steps will be explained. Furthermore it will be explained what happens in the human body after the intake.
It gives a review about the authorization by the EFSA, their analytical work about possible dangers for the human organism and the resulting definition of an acceptable daily intake. Additionally, the pros and cons compared to sugar and traditional sweeteners are explained. In the end a short overview shows the current market situation and some already available products.
