Title: Bewertung von Sprossen in der Ernährung von YOPIs

Abstract: 
Die vorliegende Arbeit beschäftigt sich mit der Bewertung von Sprossen in der Ernährung von YOPIs. Es wird einerseits der Frage nachgegangen, ob eine Verzehrwarnung von Sprossen für YOPIs sinnvoll und angebracht ist, oder ob die ernährungsphysiologischen Vorteile von rohen Sprossen überwiegen. Des Weiteren wird untersucht, ob es nach heutigem Stand der Forschung Möglichkeiten gibt, Sprossen zu sicheren Lebensmitteln aufzubereiten, damit auch YOPIs rohe Sprossen ohne erhöhtes Infektionsrisiko verzehren können.
Die Fragestellungen werden auf der Grundlage der Auswertung aktueller Fachliteratur, insbesondere englischer Fachliteratur, diskutiert. Ergänzende Informationsquellen stellen Internetseiten von Regierungen, Behörden und Organisationen dar.
Im Ergebnis wird deutlich, dass Sprossen einen ernährungsphysiologisch hohen Wert haben. Die hohe bakterielle Belastung roher Sprossen, die vor allem für YOPIs ein erhöhtes Infektionsrisiko darstellt, spricht aktuell jedoch für eine Verzehrwarnung vor rohen Sprossen für YOPIs. Ein geeignetes Verfahren, um eine ausreichende Keimreduktion auf Sprossen zu erreichen, das gleichzeitig keinen starken negativen Einfluss auf die Sprossenqualität hat, wurde nach dem heutigen Forschungstand noch nicht entdeckt. Falls geeignete Verfahren zur Keimreduktion entwickelt werden sollten, kann eine Verzehrwarnung roher Sprossen für YOPIs aufgehoben werden.

This study has two major purposes: To discuss, whether a warning against the consumption of raw sprouts for YOPIs is reasonable and appropriate, or if the physiological advantages of raw sprouts outweigh the risk of sprout-associated illnesses. Furthermore a number of methods for germ reduction are presented, to examine their impact on the microbiological contamination of sprouts.
These questions are being discussed on the basis of the assessment of current literature. English literature has been used to complement German sources. Complementary sources of information were governmental websites, website by authorities and organizations.
The conclusion of this study is that sprouts exhibit high physiological advantages on the one hand, but, on the other hand, present an increased risk of microbial infections for YOPIs, due to a high bacteria load. This risk is a strong argument for a warning against the consumption of raw sprouts. As the state of research is today, no suitable methods for germ reductions have been detected, that, at the same time, will not negatively influence the quality of the sprouts. If such methods would be developed, the warning against the consumption of raw sprouts for YOPIs can be canceled.
