Title: Entwicklung eines Produktkonzeptes – Grüne Smoothies als geeignete Maßnahme zur diätetischen Aufwertung für ältere Menschen

Abstract: 
Die Qualität der Ernährung und der daraus resultierende Ernährungszustand alter Menschen werden von unterschiedlichen Faktoren beeinflusst. Dabei spielen neben alterstypischen, medizinisch biologischen Veränderungen auch psychosoziale Faktoren eine wichtige Rolle. Ältere Menschen ab 65 können ihre Versorgung häufig noch selbstständig oder mit Hilfe von Angehörigen zu Hause sicherstellen. Von den über 75-Jährigen wird in zunehmendem Maße Essen auf Rädern in Anspruch genommen. Ein kleinerer Teil der alten Menschen wird in einem Altenheim versorgt.
Alte Menschen sind oft über- bzw. untergewichtig, unzureichend mit Mikronährstoffen versorgt und nehmen trotz erhöhtem Bedarf zu wenig Obst und Gemüse zu sich. Diese Tendenz verstärkt sich bei Pflegeheimbewohnern deutlich.
Auf diesem Hintergrund entstand die Idee, im Rahmen dieser Bachelorarbeit ein nährstoffdichtes Gesundheitsgetränk, einen Grünen Smoothie für Ältere Menschen ab 65, zu entwickeln und die Bedingungen einer erfolgreichen Vermarktung zu erörtern. Ein Grüner Smoothie ist für alte Menschen deshalb besonders geeignet, weil er als Ganzfruchtgetränk mit seiner homogen-musigen Konsistenz einfach geschluckt und leicht verdaut werden kann. Grüne Smoothies enthalten neben den Makronährstoffen zur Energiebereitstellung unverdauliche Ballaststoffe, viele Mikronährstoffe wie sekundäre Pflanzenstoffe, Vitamine, Mineralstoffe und Spurenelemente. Zurzeit gibt es auf dem Markt kein Smoothie-Produkt speziell für Senioren. Eine Stichprobe in einem Altersheim, in der ein neu konzipierter Grüner Smoothie in 3 Geschmacksvarianten auf seine Akzeptanz getestet wurde, ergab, dass 13 von 14 der Probanden bereit wären, täglich Grüne Smoothies zu trinken. Der empfohlene Konsum von 300 ml täglich könnte eine deutliche Aufwertung der Ernährungssituation alter Menschen bedeuten.
Im zweiten Teil der Arbeit geht es um die Entwicklung eines Vermarktungskonzepts des oben getesteten Grünen Smoothies. Dabei werden nach Analyse des Potentials der Zielgruppe ein geeigneter Marketingmix aus Produkt-, Preis-, Distributions- und Kommunikationspolitik vorgestellt, dessen Anwendung zu einer erfolgreichen Marktpositionierung führen soll. Als aufgrund der demografischen Entwicklung stetig wachsende Konsumentenschicht soll dabei die Bevölkerungsgruppe von über 65-Jährigen aus dem Nischendasein herausgeholt und durch angemessenes Marketing angesprochen werden. Hierbei wird auch dem Trend zu einem selbstbewussten Umgang mit dem Alterungsprozess im Sinne eines aktiven, gesundheitsbewussten Lebensabschnitts Rechnung getragen.
Abschließend wird noch auf die rechtlichen Rahmenbedingungen für die Vermarktung eingegangen.

The quality of nutrition and the resulting nutritional status of the elderly are being influenced by different factors. On the one hand medical and biological changes occur, which are typical for the elderly. But also psycho-social changes play an important role.
Elderly over 65 can often take care of themselves at home, eventually with the help of relatives. Once they reach the age of 75, “meals on wheels” are frequently taken advantage of. A smaller part of the elderly are taken care of in retirement homes. Often, elderly are under- or overweighed. Their supply with micronutrients is often insufficient. And although their need for vegetables and fruit is increased, they often eat too less of it. This tendency is clearly increased with people living in retirement homes.
From this background, the idea was born to develop in the context of this Bachelor paper a nutritionally dense, healthy drink for Elderly over 65: a Green Smoothie. How to bring it successfully into the market will also be discussed.
A Green Smoothie is suited particularly for old people, since it can be easily swallowed and digested , because of its homogenous and smooth consistence. Green Smoothies contain not only energy providing macro nutrients and indigestible dietary fibers, but also many micro nutrients, such as Vitamins, Minerals and Trace Elements.
Today there is no “smoothie” on the market, especially developed for the elderly. A newly created Green Smoothies has been spot-checked in a retirement home in 3 different tastes. 13 out of 14 tested persons were willing to drink the Green Smoothies on a daily basis. The recommended daily intake of 300 ml, could improve substantially the nutritional status of the elderly. The second part of this Bachelor paper deals with the development of a marketing concept for the above tested Green Smoothies. After analyzing the potential of the target group, an appropriate Marketing mix of product composition, pricing policy and distribution- and communication strategy is being presented. This strategy should result in a successful market position. Due to the demographic development, the segment of the population over 65 increases constantly. They should be released out of their niche and be addressed with appropriate marketing measures. The tendency to approach the process of getting older with more self confidence, in the sense of living an active life with more health-consciousness, plays herewith an important role.
At the end the legal environment concerning the marketing measures are also being discussed.
