Abstract: 
Eine gesunde Ernährung hat für den Erhalt der Gesundheit und Leistungsfähigkeit der Beschäftigten eine große Bedeutung und kann dazu beitragen, ernährungsmitbedingte Krankheiten wie zum Beispiel Diabetes mellitus Typ 2, Stoffwechselstörungen und Herz-Kreislauferkrankungen zu verhindern. Daher ist die gesundheitsgerechte Verpflegung im Arbeitsalltag ein wichtiges Handlungsfeld im Rahmen der betrieblichen Gesundheitsförderung.
Die Darstellung der aktuellen Ernährungssituation der deutschen Bevölkerung, der Empfehlungen für eine gesunde Verpflegung und der Einflussfaktoren auf das individuelle Ernährungsverhalten erfolgt auf der Grundlage einer umfassenden Literaturrecherche. Die wichtigsten Aussagen über das Ernährungsverhalten sind der signifikant zu niedrige Verzehr von Obst und Gemüse, die unterhalb des Richtwertes liegende Zufuhr an Kohlenhydraten und Ballaststoffen, die zu hohe Fettzufuhr sowie die mangelnde Zufuhr an Vitamin D, Folsäure, Calcium, Eisen und Jod. Die größte Hürde für eine gesunde Ernährung am Arbeitsplatz scheint die mangelnde Zeit zu sein.
Das Ziel der vorliegenden Bachelorarbeit ist es, als praktische Bandlungsanleitung einen Leitfaden zur Optimierung der Konferenzverpflegung für Betriebe zu erstellen, den diese im Rahmen des betrieblichen Gesundheitsmanagements zur Förderung einer gesunden Ernährung der Beschäftigten umsetzen können. Der Leitfaden wird auf der Basis des Public Health Action Cycle erstellt. Als Instrumente für die Analyse und die Bewertung werden eine Checkliste zur Ist-Situation sowie zwei Fragebögen entworfen. Aufbauend auf den Ergebnissen der Literaturrecherche werden Handlungsempfehlungen mit Rezeptvorschlägen gegeben.

A healthy diet is of great importance for preserving the health and efficiency of employees and can contribute to prevent food-related diseases such as type 2 diabetes, metabolic disorders and cardiovascular diseases. Therefore, the health-friendly catering in everyday work is a crucial area in the context of workplace health promotion. The representation of the current food situation of the German population, of the recommendations for a healthy diet and of the factors influencing individual dietary behaviour is based on a global literature review. The most important facts related to dietary behaviour are the significantly low consumption of fruits and vegetables, the below guidance value intake of carbohydrates and fiber, the excessive fat intake as well as the insufficient intake of vitamin D, folic acid, calcium, iron and iodine. The greatest difficulty for healthy eating at the workplace seems to be the lack of time.
The goal of this bachelor thesis is to develop a guideline to optimize the conference catering in companies as a practical plan to be implemented for the provision of a healthy diet for the employees in the context of workplace health promotion. The guide is created on the basis of the Public Health Action Cycle. As instruments for the analysis and the evaluation there are designed a checklist to the actual situation as well as two questionnaires. Based on the results of the literature review recommendations with recipe suggestions are provided.
