Title: Einfluss unterschiedlicher Fermentation und Röstung auf das Aromaprofil von peruanischem Chuncho-Kakao

Abstract: 
Die Ausarbeitung trägt den Titel „Einfluss unterschiedlicher Fermentation und Röstung auf das Aromaprofil von peruanischem Chuncho-Kakao“. Dieser Masterarbeit liegt die Fragestellung zugrunde, inwiefern bestimmte Behandlungen das Aromaprofil von Kakao beeinflussen. Ziel ist es, eine Grundlage für Empfehlungen zur Behandlung von Rohkakao, bei dem ein bestimmtes Aromaprofil im Endprodukt angestrebt wird, zu schaffen. Das Rohmaterial ist Chuncho-Kakao aus der Region Quilanamba in Peru. Diese Arbeit beschäftigt sich mit den Faktoren Fermentation, Fermentationsdauer sowie Röstung. In Hinblick auf die Fermentation wurde untersucht inwiefern das Inokulieren mit dem Hefestamm ZYMAFLORE® X5 (Saccharomyces cerevisiae) einen Einfluss hat im Vergleich zu spontan abgelaufener Fermentation. Von beiden Fermentationen wurden an Tag 0, Tag 3 und Tag 5 jeweils Proben entnommen und diese jeweils gedrittelt und nach einem dreistufigen Röstprotokoll geröstet. Diese 18 Proben wurden von einem geschulten Panel verkostet und hinsichtlich 13 Attributen bewertet. Der Einfluss der Behandlungen muss für jedes Attribut separat betrachtet werden. Die Fermentationsdauer und Röstung haben den stärksten Einfluss auf das entstehende Aromaprofil. Die Art der Fermentation hat hier einen sehr geringen Einfluss. Die Ergebnisse sind eine gute Grundlage für weitergehende Überlegungen und Forschungen.
Diese Arbeit ist ein Teil des CORNET-Projekts Cocoa Chain – Quality improved Cocoa and Cocoa-based Products with Flavour Profiles on Demand – ‘From Farm to Chocolate Bar’.

This thesis is titled „Einfluss unterschiedlicher Fermentation und Röstung auf das Aroma-profil von peruanischem Chuncho-Kakao“ (engl. Effect of different fermentation and roast-ing on the aroma profile of Peruvian Chuncho-cocoa). This Master’s thesis explores the question on how certain treatments effect the aroma profile of cocoa. The raw material is Chuncho-cocoa from the region of Quilanamba in Peru. The goal is to find a base for rec-ommendations for certain curing that delivers a desired aroma profile in the final product. This work compares and evaluates the effects of fermentation, duration of fermentation and roasting. With two types of fermentation (inoculated with ZYMAFLORE® X5 (Saccharomy-ces cerevisiae) vs. spontaneous), three durations (0, 3 and 5 days), and three different roasting levels, 18 samples in total were produced and then evaluated by a trained panel, considering 13 different attributes. The research shows that every attribute is affected dif-ferently. Duration of fermentation as well as roasting have the biggest impact on the aroma profile. The form of fermentation has only little impact. The results can be used as a foun-dation and inspiration for further research.
